This is a really nice recipe for parties or the footy.

Serves: 18 

  • 3 hot baked potatoes, spilt lengthways
  • 3/4 cup (90g) grated cheddar or cheese with peppercorns in it
  • 1 1/3 cups frozen finely sliced onions
  • 1/4 cup (70g) chopped jalapeños
  • 1/4 cup (70g) cooked crumbed bacon
  • mild salsa
  • sour cream

Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

  1. Preheat oven to 180 degrees C. Scoop out inside of potatoes leaving 6mm shells. Reserve inside of potatoes for another use.
  2. Arrange potato halves on baking sheet. Top with cheese, 2/3 cup frozen onions, jalapeños and bacon.
  3. Bake 15 minutes or until heated through and cheese is melted. Cut each potato half crosswise into thirds. Serve topped with salsa, sour cream and remaining onions.
