    Simple Tomato and Pancetta Sauce for Pasta

    I got this recipe from my nonna. It's quick easy and healthy, good for working mums or anyone who likes a quick meal.

    Serves: 4 

    • 375g penne or any dry pasta
    • 10ml olive oil
    • 3 cloves of garlic, finely chopped
    • handful of fresh parsley, chopped
    • pinch of chilli
    • 250g pancetta, chopped (if not available use bacon)
    • 1 cup (250ml) passata or tomato puree

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Cook the pasta as per packet directions till al dente. Drain. In the meantime heat the pan with the olive oil to hot than add the garlic, parsley and chilli to sweat together. Then add the pancetta and passata and cook for 5-7 minutes.
    2. Mix in with the pasta to serve, or serve spooned into individual bowls.
