    Another one adapted from a recipe I found in a Tex-Mex cookbook.

    Serves: 8 

    • 450g beef mince
    • 1 pack (40g) French onion soup mix
    • 1 tin (400g) black beans, rinsed and drained
    • 1 cup prepared salsa
    • 1 packet plain corn chips
    • 1 cup (250g) grated tasty cheese/red Leicester cheese

    Preparation:10min  ›  Cook:12min  ›  Ready in:22min 

    1. In medium non stick frying pan, brown beef mince over medium-high heat; drain.
    2. Stir in soup mix, black beans and salsa. bring to a boil over high heat. Reduce heat to low and simmer 5 minutes or until heated through.
    3. Arrange corn chips on serving platter. Spread beef mixture over chips; sprinkle with tasty cheese. Top, if desired, with sliced green onion, sliced pitted ripe olives, chopped tomato and chopped coriander.
