Cheesy Green Rice

    I got this recipe from my mother-in-law in the United States. Serve with crusty Italian bread.

    Ingredients
    Serves: 4 

    • 2 packets (500g) instant rice
    • 2 litres chicken stock
    • 1 can of cream of chicken and mushroom soup
    • 1 packet (500g) of frozen broccoli
    • 500g Cheddar cheese, cut into 2cm blocks

    Directions
    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a large pot, cook rice as per directions in the chicken stock.
    2. After rice is cooked add can of soup, frozen broccoli and cheddar cheese.
    3. Cook on stove until cheese is melted and mixed with the broccoli, rice and soup.
