Here's a quick and simple recipe for delicious pork loin medallions or chops. All you do is baste the meat with a sauce of butter, lemon juice and garlic. Very basic, yet you won't believe how moist and flavourful the chops will be. These can also be done in the frypan or under the griller.

Serves: 6

  • 3 tablespoons (60g) butter
  • 2 teaspoons lemon juice
  • 1 clove garlic, minced
  • 6 pork chops
  • 1 pinch salt

Preparation:10min  ›  Cook:20min  ›  Ready in:30min

  1. Preheat barbecue for high heat and lightly oil cooking grate.
  2. Melt the butter in a small saucepan over medium heat. Stir in the lemon juice and the garlic and heat until garlic is tender. Remove from heat.
  3. Arrange the chops on a plate and coat top side of each chop with the butter mixture. Place chops on the cooking grate butter side down.
  4. Sear over high heat for 1 minute, coating the top side of the chops with the butter mixture while the other side is barbecuing. Flip the chops and sear the other side for 1 minute.
  5. Turn the meat, cover the barbecue and cook 3 to 5 more minutes per side, brushing occasionally with the remaining butter mixture. Pork chops are done when internal temperature reaches 70 C.

Absolutely wonderful. It was simple and quick. My entire family liked it. I am going to try this on chicken also. Thanks for the good recipe. - 08 Oct 2008

Something else. My family & I really like highly seasoned food. As is, I knew this would be a very bland recipe. I mixed in steak seasoning with the lemon juice & a little water & marinated pork steaks for about 4 hrs. Then I poured off the marinade & mixed in the butter & brought it to a boil & then basted the pork steaks as recipe suggests. I fixed them under the grill & they were delicious. Would have given a four but as stated as is I think the recipe is bland. - 08 Oct 2008

Used different ingredients. I added some oregano, parsley and rosemary to the recipe. It added a lot of extra flavour. - 08 Oct 2008
