Jamaican Prawns or Scallops

    A quick and tasty way to eat prawns or scallops. Serve with fluffy white rice and garnish with fresh coriander leaves. I use "Herbie's Spice" jerk seasoning for this dish and you can also use it as a rub or a marinade for any grilled or barbecued meat.

    Serves: 4 

    • 1 tablespoon of cooking oil
    • 1 small onion, finely chopped
    • 1 capsicum chopped
    • 1 teaspoon of jerk seasoning
    • 16 large green prawns, peeled and deveined, or 16 scallops
    • 1 tin (400g) of chopped tomatoes

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat oil and cook onions and capsicum until soft.
    2. Stir in jerk seasoning, prawns and tomatoes and cook until prawns are just done, about 3 minutes.
