Healthy Date and Walnut Fruit Loaf

A wholesome and healthy recipe that I got from a friend. I tweaked it a little and it turned out fab. It does not need butter, oil and eggs, which is why I like it even more! You can use any type of nuts, it's really up to you. Enjoy!


Serves: 12 

  • 1 cup (250ml) of hot coffee
  • 1 cup (155g) of chopped pitted dates
  • 1¼ cups (155g) walnut pieces
  • 3/4 cup (75g) rolled oats
  • 2 ripened bananas, mashed
  • 1 apple, peeled, cored and chopped
  • 1¼ cups (155g) plain flour
  • 1 teaspoon bi-carbonate of soda
  • ¼ cup (40g) brown sugar

  1. Preheat oven to 180 degrees C. Lightly grease a loaf tinn.
  2. In a large bowl, combine the coffee and dates and soak for 15 minutes.
  3. In another bowl, combine the walnuts, rolled oats, bananas and the apple and mix well.
  4. In a separate bowl, sieve flour and baking soda. Ensure baking soda is not lumpy. Add in soft brown sugar. Mix well and put aside.
  5. Add the walnut and fruit mix to the coffee/date bowl and mix well.
  6. Then add the dry ingredients and mix well.
  7. Pour into the prepared loaf tin. Bake in preheated oven for 50 - 55 minutes, or until a skewer inserted into the centre of the loaf comes out clean.
  8. Let the loaf cool in the tin for at least 5 minutes, then turn out onto a cooling rack to cool completely.
