Get a plastic bag and add the oregano, basil, salt and pepper to it.
Add the olive oil and garlic to a bowl and press the fillets into it to coat.
Heat up oil in pan on medium/high to cook the chicken.
Gently place chicken in pan - tongs are good for this.
Cook the chicken through. When it starts to brown on the second side take a step back and and add the white wine (WARNING-it might flame up but the alcohol will burn away. If this happens step away from the pan until the flames go down - do not panic! Flames are a good thing in this recipe.)
Chicken should now be deliciously brown and juicy and have some gravy from the pan. If you need more gravy add some water and wine as desired and cook on stove until thickens.
