A great chicken recipe I love to make for lots of guests. It's fresh,juicy and so delicious but so easy to make for dinner at home any night.

Serves: 8 

  • 1 packet (4-500g) boneless chicken fillets
  • 3 tsp lemon juice
  • 1 handful of dried oregano
  • 1 handful dried basil
  • 3 twists of ground pepper (from a pepper mill)
  • 2 pinches salt
  • 2 cloves of fresh garlic, chopped or 1½ tsp garlic mince
  • 1/4 cup of olive oil (to coat chicken)
  • 1 cup white wine - like reisling or a sauv blanc
  • oil to cook the chicken in

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Get a plastic bag and add the oregano, basil, salt and pepper to it.
  2. Add the olive oil and garlic to a bowl and press the fillets into it to coat.
  3. Heat up oil in pan on medium/high to cook the chicken.
  4. Gently place chicken in pan - tongs are good for this.
  5. Cook the chicken through. When it starts to brown on the second side take a step back and and add the white wine (WARNING-it might flame up but the alcohol will burn away. If this happens step away from the pan until the flames go down - do not panic! Flames are a good thing in this recipe.)
  6. Chicken should now be deliciously brown and juicy and have some gravy from the pan. If you need more gravy add some water and wine as desired and cook on stove until thickens.
  7. Enjoy!
