Banana and Carrot Muffins

    A kind of unusual combination of banana and carrot - with a little orange juice - in these yummy moist muffins.

    Makes: 12 muffins

    • 1/2 cup (125g) white sugar
    • 2 eggs
    • 3 small bananas, mashed
    • 2 tablespoons orange juice
    • 1 cup grated carrot
    • 2 cups (250g) self-raising flour
    • 125g butter, softened

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat oven to 180 degrees C.
    2. Cream butter and sugar, then mix in the eggs and juice.
    3. Add the grated carrots and the bananas and mix in.
    4. Sift in the dry ingredients and stir just enough to mix.
    5. Spoon into 12 lined muffin tins. bake in preheated oven for 25 minutes.
    6. Cool and top with cream cheese icing if you like.

    These were okay but turned out more like a scone than a muffin. They would be good with a bit of icing on the top  -  15 Aug 2014
