Peanut Crunch Slice

    Chewy peanut slice with cornflakes and coconut and then iced. Good for a work morning tea or just to have around the house for emergencies!

    Serves: 12 

    • For the slice
    • 1/2 cup (125g) sugar
    • 1 cup (125g) flour
    • 1/2 cup (90g) chopped peanuts
    • 1cup (30g) cornflakes
    • 1 cup (90g) desiccated coconut
    • 1 teaspoon baking powder
    • 140g butter
    • 1 tablespoon golden syrup
    • For the icing
    • 2 tablespoons butter
    • 1½ cups icing sugar

    1. Preheat oven to 160 degrees C.
    2. Measure dry ingredients into a bowl. Melt butter and syrup together and add to dry ingredients. Mix well.
    3. Spread out in a sponge roll or slice tin and bake in a slow to moderate oven for 15 minutes. Ice while still warm
    4. To make the icing; melt the butter then add icing sugar. Mix well then spread over slice.
