Double Chocolate Cookies

    A semi-soft double choc biscuit, easy to make with basic ingredients. Have been making these for years - kids and grown ups love them.

    Serves: 40 

    • 275g butter or margarine, softened
    • 1 1/3 cups (290g) white sugar
    • 1 egg
    • 2 teaspoons vanilla essence
    • 2 1/2 cups (310g) plain flour
    • 1/2 cup (60g) cocoa
    • 1 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 100g dark chocolate chips

    1. Preheat oven to 180 degrees C. Cream butter and sugar in a mixing bowl.
    2. Add egg and vanilla and beat well.
    3. Sift flour, cocoa, bicarb soda and salt over the creamed mixture and mix well. Add chocolate chips and stir through.
    4. Using 2 teaspoons, place heaped teaspoons of the mixture onto a tray lined with greased baking paper (or spray the paper with cooking spray) approx 6cm apart.
    5. Bake in preheated oven for 8-10 min (up to 12 minutes if you like them firmer).
    6. Allow to cool for 5 min on the tray for handling ease before placing on a wire rack to cool completely.
