Super Moist and Rich Chocolate Cake

    I came up with this recipe as a result of a chocolate craving and not having cooking chocolate in hand, I used only cocoa. If you don't have buttermilk handy, just mix 1 cup of milk with 1 tablespoon of lemon juice and let it set for 15 minutes. This is sooo yummy I hope you like it!

    Serves: 6 

    • 1 cup (125g) flour
    • 1 cup (220g) sugar
    • 1/2 cup (60g) cocoa
    • 1 teaspoon bicarb soda
    • 1 large egg
    • 1/2 teaspoon salt
    • 3/4 cup (190ml) buttermilk
    • 125g melted butter
    • 3/4 teaspoon vanilla essence
    • 1/2 cup (125ml) boiling water
    • Icing
    • 125g butter
    • 1 cup (155g) icing sugar
    • 1/4 cup (30g) cocoa
    • 1/4 cup (65ml) cream

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 150 degrees celsius. Grease and flour a medium cake tin.
    2. Mix the flour, cocoa, bicarb and salt in a bowl and set aside.
    3. Mix the melted butter and sugar until well combined, then add egg, buttermilk and vanilla.
    4. Mix wet and dry ingredients, and then add boiling water.
    5. Put into the cake tin and cook in oven for 30 minutes.
    6. To make the incing; Melt the butter with the icing sugar until sugar is melted and the mixture is smooth. Add 1/4 cup cocoa and 1/4 cup of thick cream. Stir until smooth and glossy. Take off heat and let cool completely before icing cake.

    I made this as cupcakes, they all rose up, spilled over and sank into a mushy hole-y mess. So bad that I won't even try it again.  -  14 Apr 2012
