Chocolate Pecan Slice

    A yummy slice made of a shortbread base with a chocolate pecan misture spread on the top. Great for when you need to bring a plate or a potluck.

    Serves: 16 

    • 185g (1 1/2 cups) self-raising wholemeal flour
    • 1/4 cup (60g) white sugar
    • 125g butter
    • 1/4 tsp salt
    • 2 eggs
    • 3/4 cup golden syrup
    • 1 cup (220g) white sugar
    • 2 tablespoons butter, melted
    • 1 tablespoon vanilla essence
    • 1 cup (90g) pecan halves
    • 1 cup (170g) chocolate chips

    1. Preheat oven to 180 degrees C. Grease the sides and bottom of a small baking tray or slice tin.
    2. In a large bowl combine the flour, 1/4 cup sugar, butter and salt until the mixture resemble coarse crumbs. Press firmly into the prepared pan.
    3. Bake in preheated oven for 15 minutes.
    4. Meanwhile, in a large bowl, stir the eggs, golden syrup, 1 cup white sugar, the melted butter and vanilla until blended. Stir in the chopped pecans and chocolate chips.
    5. Spread the filling evenly over the hot base. Bake at 180 degrees C for 25 minutes or until set. Let cool before slicing.
