    This is a recipe that I got with my slow cooker but,, as with all my recipes, I have tweaked it a little. Also I sometimes leave adding the chilli till after it is cooked so I' can take out the kids' portions beforehand.

    Ingredients
    Serves: 4 

    • 450g lean beef mince
    • 1 tin (400g) four bean mix, with liquid
    • 1 tin (400g) red kidney beans, with liquid
    • 2x400g tins tomatoes, with juice, broken up
    • 1 finely chopped onion
    • 1 cup of mild or medium salsa
    • 2/3 cup (125g) uncooked long grain rice
    • 125 ml your favorite chilli sauce
    • 1 tsp salt
    • ¼ tsp pepper
    • ¼ tsp garlic powder
    • ¼ tsp chilli powder
    • 1 cup (250 ml) water

    Directions
    Preparation:15min  ›  Cook:9hours  ›  Ready in:9hours15min 

    1. Fry the mince in non-stick frying pan. Drain well. Turn into 3.5 litre slow cooker.
    2. Add all the remaining ingredients (unless you're holding back the chilli0, stir and cover. Cook on Low for 8 – 9 hours or on High for 4 – 4.5 hours.
    3. Good for dinner and usually leftovers which are great to use in taco or nachos.
