I wanted to create a red snapper dish that uses Asian flavours with simple French techniques. This dish truly exemplifies the perfect fusion of East and West. I am proud of this dish and you will be as well!
Coat red snapper fillets with paprika, salt and pepper.
Using extra virgin olive oil, lightly sear both sides of fillets on frying pan over med-high heat then place in baking dish.
In the same frying pan, add garlic, ginger, shallots, tomato and lemon rind and fry for 1 min.
Add white wine and season with salt and pepper. Add butter, lower heat and simmer for 2-3 mins.
Pour contents of the pan over the fish and place lemon slices on top of fillets. Bake in the oven for another 15 to 20 mins (depending on the size of the fillets).
