Mashed potato and pumpkin with a stroganoff style sauce mixed through it. Sounds weird but people can't get enough of this. Goes well as a side with stews or roasts.
Peel and cut the pumpkin and potatoes into quarters and boil them in a pot of boiling water until tender. Drain and put aside.
In the pot add oil and when hot add thinly sliced garlic. Cook the garlic until tender (about 2 minutes) and add potatoes and pumpkin
Stir and cool through for 10 minutes
Turn off the heat and then mash the potatoes and pumpkin well.
In a small bowl, mix the tomato paste and sour cream together. Add the tomato paste and sour cream mix to the mashed vegetables and stir through well. Add salt and pepper to taste.
