Oyster Soy Chicken Stir Fry

    Succulent strips/chunks of chicken breast marinated in oyster sauce, soy sauce, garlic and nutmeg and then stir fried with vegetables of your choice.

    Serves: 5 

    • 500g chicken breast
    • 1 packet Hokkien noodles
    • For the marinade
    • 3/4 cup oyster sauce
    • 1/2 cup soy sauce
    • 1 tbsp garlic
    • 1/2 tbsp nutmeg
    • 1 bunch bok choy
    • 2 carrots
    • a head of broccoli
    • 1/2 cauliflower
    • 1/2 white/red cabbage
    • 100g shitake mushrooms
    • oil for frying

    1. Prepare the marinade by stirring all the ingredients together in a medium-sized bowl.
    2. Cut the chicken breast into bite-sized strips or chunks and marinate for 15-30 minutes (up to you really on how marinated you want it).
    3. Using oil of your choice (I use olive or vegetable oil), grease a wok or frypan and place on high heat.
    4. Remove most of the marinade from the chicken, although ensure the chicken is still moisturised and has something to 'swim' in.
    5. Add the chicken to the wok/frypan and cook till it is brown on the outside and cooked on the inside. remove from teh wok and keep warm.
    6. Prepare the Hokkien noodles per the instructions on the packet while you continue to cook the chicken.
    7. Chop your vegetables the way you like and add them all to the wok - except bok choi and mushrooms as these cook fairly quickly- so add them towards the end.
    8. Stir fry till all done. Serve & enjoy on a bed of noodles.
