I started this recipe from a very basic one and now I think this is my speciality. I don't use butter or oil because it makes the pancakes less light and fluffy.
1 cup (125g) self raising flour
1 large egg
3/4 cup (190ml) milk
1/2 teaspoon baking powder
1/4 teaspoon salt
- Make sure your milk and egg are at room temperature. If not put the two together and heat in the microwave for less than a minute depending on its power. Just make sure you don't cook the egg.
- Mix all ingredients together with a spoon or spatula. Keep the batter lumpy by not mixing it too much.
- Heat a non stick frying pan on high. Once it sizzles from drops of water it's ready. Reduce the heat from high to medium-high to get a perfect golden brown colour.
- Pour in about half a cup of batter and cook till bubbles form on the up side. Flip and cook on the other side.
Altered ingredient amounts.
add quarter cup of cream and a cup of blue berries gently stirred in - yum!

love this recipe, tastes and look great, also its easy, my three thing that i love in a recipe.
