Chicken Breast Feta Parcels

Baked chicken breast fillets with a feta filling, topped with feta and garlic. They're called parcels but no pastry is involved so easy to make - and eat!


Serves: 4 

  • 4 chicken breast fillets
  • 100g feta (block)
  • 2 garlic cloves crushed/grated
  • 2-3 tablespoons breadcrumbs
  • olive oil, for greasing

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Grease a tray with olive oil.
  2. Trim the chicken fillets to your liking, then slice in half through the middle. This is a little hard to get just right but it doesn't matter it all tastes the same.
  3. Slice the feta in 1/2 cm thick slices. (You will use a slice in the middle of each breast and you'll also need some for the topping.)
  4. Place a piece of feta in each fillet and roll up.
  5. Combine, breadcrumbs, garlic and crumbled feta in a small bowl, then sprinkle over top of the rolled up chicken parcels.
  6. Cook in pre-heated oven, until they are done about 30 - 45 mins when the juices run clear.
