Barbecued Zucchini Mini Pizzas

    This is a great use for those giant zucchini that appear on your zucchini plants while your back is turned! Or, alternatively, you slice smaller zucchinis lengthways. The slices become a mini "pizza" base that you can cook on the barbecue.

    Serves: 10 

    • 1 large zucchini
    • 110g butter, melted
    • 3 cloves crushed garlic
    • 60g mozzarella cheese
    • 250g pizza sauce base or tomato puree

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Slice the zucchini into thick rounds. Combine the melted butter and crushed garlic in a small bowl. Set aside.
    2. Brush the zucchini slices with the butter mixture and cook over a low heat for three to five minutes. Turn over and brush the butter mixture the other side of the slices and cook for three to five minutes more. Turn the slices one more time and cover them with pizza sauce and cheese and cook until the cheese melts.

    Made it more kid friendly. This is a wonderfull treat. I added pepperoni and some parmesan cheese. The kids also loved it. Thanks for the recipe.  -  29 Sep 2008


    Altered ingredient amounts. Blended up leftover veges with tomatoes to use a topping and added olives on top. Grilled not bbq'd.  -  18 May 2009


    Its a nice simple Sunday night idea. Had to use smaller zucchinis - grilled not bbq'd - and basically just blended up leftovers with tomatoes to make the sauce. Easy, quick.  -  18 May 2009
