Barbecued Black Bean Chicken

    An easy, mouthwatering, ginger and black bean marinade for barbecued chicken. Allow two hours for the chicken to marinate.

    • 6 skinless chicken thighs
    • 1 tablespoon minced fresh ginger root
    • 1 tablespoon minced garlic
    • 1 tablespoon black bean sauce
    • 1 teaspoon sesame oil
    • freshly ground black pepper to taste

    1. Place thighs in a bowl, and add ginger, garlic, black bean sauce, sesame oil and ground black pepper. Stir well until completely coated. Marinate in the refrigerator for 2 hours.
    2. Barbecue chicken over medium heat until no longer pink but still juicy, about 20 minutes, turning only once.

    YUM!! I am a uni student living with three girls. We are always looking for great recipes to impress each other and our frequent guests. This recipe is terrific!! It has a mouthwatering aroma and is very flavourful. We don't have an outdoor barbecue so I used our George Foreman instead and it worked just fine.     Wow!! This recipe was incredible. I used boneless, skinless chicken thighs, and grilled them outdoors on our barbecue. I marinated the thighs for 2 1/2 hours at room temperature, and they were brilliant. My husband, and two kids *ages one and three* loved them too. This will easily become a regular in our house!!     this was pretty good. next time i make it, i will add either fish sauce or soy sauce to add more flavour. even some lemon may add a little more.  -  18 Jul 2008
