Chicken in Plum Sauce

    This is a great Chinese-style dish to serve for people who aren't too keen on chilli. It has all the flavour but none of the heat.

    Serves: 4 

    • 125ml cooking oil
    • 1 clove garlic
    • 1.5kg diced chicken meat
    • 1/3 cup Plum Sauce
    • 5 celery stalks, diced
    • 4 slice ginger
    • 3 tablespoon sherry
    • 4 carrots, cut into small cubes
    • 2 teaspoons sugar
    • 1 teaspoon salt
    • 1/3 cup Chinese pickles
    • 1/4 cup water
    • 2 teaspoons cornflour mixed with 1/4 cup water

    1. Cut chicken into bite-sized pieces. Peel carrots and cut into cubes, crush or finely chop the garlic.
    2. Place oil and garlic in a wok or frypan. Stir fry till fragrant - a minute or so. Add the chicken; stir-fry for 5 minutes, cover, reduce heat, and simmer for 10 minutes.
    3. Add plum sauce celery, ginger, sherry, carrots, sugar salt, pickles and water. Simmer covered for 12 minutes.
    4. Add the cornflour/water mixture to thicken gravy; stir through and serve hot with rice.
