    We had a creek in the backyard with all this wild watercress growing along it so I just adjusted a standard pesto recipe that I still make even though I don't live on the creek anymore! It's great with pasta, on salads, as a dip etc like any pesto.

    Ingredients
    Serves: 8 

    • 1/2 bunch (about 100g) watercress
    • 1 clove garlic, chopped
    • 50g walnuts
    • 100g freshly grated Parmesan Cheese
    • 2 tablespoons mayonnaise

    Directions
    Preparation:10min  ›  Ready in:10min 

    1. Place the garlic, walnuts, watercress, Parmesan cheese and mayonnaise into a food processor or blender. Pulse until a finely chopped paste has formed.

    I used all watercress the first time I made this and half rocket this time. And I always add a litle salt. What I like about this recipe is that you learn u can make pesto out of anything green, leafy and tasty:-)  -  22 Oct 2009

    I had never tried watercress before, nor had I made my own pesto. I really like this pesto a lot. I added lemon to mine after putting it on pasta. This recipe is great! Leftovers for lunch tomorrow  -  13 Nov 2010  (Review from Allrecipes USA and Canada)
