We had a creek in the backyard with all this wild watercress growing along it so I just adjusted a standard pesto recipe that I still make even though I don't live on the creek anymore! It's great with pasta, on salads, as a dip etc like any pesto.
1/2 bunch (about 100g) watercress
1 clove garlic, chopped
100g freshly grated Parmesan Cheese
2 tablespoons mayonnaise

Place the garlic, walnuts, watercress, Parmesan cheese and mayonnaise into a food processor or blender. Pulse until a finely chopped paste has formed.
I used all watercress the first time I made this and half rocket this time. And I always add a litle salt. What I like about this recipe is that you learn u can make pesto out of anything green, leafy and tasty:-) - 22 Oct 2009
