Traditional bruschetta blended with cream cheese. It also makes a tasty dip or spread. Whip it up for your next party.
2 large tomatoes, chopped and seeded
1 cup fresh basil leaves, chopped
1/3 cup finely chopped onion
250g low fat cream cheese, softened
2 tablespoons olive oil
3/4 tablespoons minced garlic
salt and pepper to taste
- Mix together the tomatoes, onion, garlic, basil, oil, salt & pepper.
- Add cream cheese and blend thoroughly.
- Spread on just toasted/grilled slices of Italian bread or use as a dip.
