Layered Cheese Popcorn Pie

    My dad has been making this cheesy popcorn as a Sunday night snack for ages. We like playing around with different seasonings and it's so much better than using the microwave.

    Serves: 2 

    • 1 cup unpopped popcorn
    • 60g melted unsalted butter
    • seasoning salt
    • black pepper
    • 1 teaspoon either garlic powder, chilli powder, Italian herbs or your preference
    • 1 cup (125g) grated cheddar cheese

    1. Pop the popcorn in an air popper 1/4 cup at a time into a large bowl. You can also use a pot to pop the corn.
    2. Preheat the oven to 150 degrees C.
    3. Scoop the popcorn into 2 medium sized, oven safe, ceramic, glass or metal mixing bowls.
    4. Pile the first layer of popcorn about 2cm high in the bowl. Sprinkle on melted butter using a small spoon.
    5. Sprinkle salt, pepper and seasonings lightly. Very little is needed to flavour popcorn. Sprinkle on the grated cheese.
    6. Add another layer of popcorn, seasonings and cheese like this until the bowl is full. Top with cheese.
    7. Bake for five minutes, or until the cheese is well melted.

    What a great snack! I love popcorn and wasn't really convinced this would be that much better, but it was great! I chose to use Lawry's Seasoned Salt and garlic powder for my seasonings, but the possibilities are endless. The only thing that has me a bit flummoxed is the "pie" moniker...perhaps that's something getting a bit lost in translation? Either way, a great snack!  -  13 May 2013
