Preheat oven to 180 degrees C. Line base and sides of a deep 20cm-square baking dish with baking paper then brush with melted butter (or you can use cooking spray)
Chop butter and put in a medium sized saucepan. Roughly chop chocolate and add to the pan. Stir butter and chocolate mixture over a low heat until both have melted and the mixture is smooth. Remove pan from heat and leave to cool.
Put eggs, sugar and vanilla into a mixing bowl and using an electric mixer beat until mixture is thick and pale. Add cooled chocolate mixture, choc chips (or roughly chopped nuts) and sifted flour and cocoa to egg mixture, mix in well, but gently.
Pour brownie batter into the baking dish and spread to the edges. Tap the dish bottom against the counter gently a few times to make sure there is no air bubbles and to settle the batter.
Bake in preheated for 30-35 minutes. Remove dish from oven and let cool before cutting into squares.
Ok, at top of recipe says prep 10 mins and cook 45. Then in point 5 says cook for 30-35 mins. First, you really need to put which is the supposed correct cooking time. I had to cook mine for well over an hour but that could be my oven. I used 1/2 cup of white choc bits and 1/2 cup of macadamia nuts as I have a weakness for white choc and macadamia. I have had a piece fresh out the oven and it is not too bad. I will most probably make this again but for now, am not a big fan of this one but will give it a second chance. - 04 Sep 2012
