Basic Bruschetta

    Authentic bruschetta isn't dry toasted bread covered with condiments - it's just about the oil and garlic. With minimal effort it can stand on its own and complement your soup or pasta or risotto.

    Serves: 4 

    • 4 slices of good bread, preferably a round loaf sliced about 2cm thick
    • a clove of garlic, cut in half
    • 2 Tablespoons extra virgin olive oil.

    1. Preheat the grill.
    2. Brush olive oil on both sides of the bread, and then rub them to taste with garlic.
    3. Grill browned but do not allow the bread to dry out in the middle.
    4. Serve immediately
