Authentic bruschetta isn't dry toasted bread covered with condiments - it's just about the oil and garlic. With minimal effort it can stand on its own and complement your soup or pasta or risotto.
4 slices of good bread, preferably a round loaf sliced about 2cm thick
a clove of garlic, cut in half
2 Tablespoons extra virgin olive oil.
- Preheat the grill.
- Brush olive oil on both sides of the bread, and then rub them to taste with garlic.
- Grill browned but do not allow the bread to dry out in the middle.
- Serve immediately
