Flourless chocolate brownies

    Gluten-free, no flour, lots of eggs, so cooking temperature determines flavour. Use high quality cocoa if you can and chocolate of 60% or higher. These can be eaten frozen, at room temperature, or warm with ice cream.

    Serves: 12 

    • 300g chocolate, broken up into pieces
    • 150g unsalted butter
    • 50g cocoa powder, sifted
    • 200g castor sugar
    • 4 free range eggs

    1. Preheat oven to 180 degrees C.
    2. Place a metal or heatproof glass bowl over a pot of simmering water and melt the chocolate and butter together.
    3. When melted, remove from the heat, stir in cocoa well and set aside.
    4. Break eggs into a different bowl and beat well with whisk. Add the sugar then whisk until doubled in volume.
    5. Fold chocolate mixture into eggs till just mixed.
    6. Bake 20-30 minutes in preheated oven; the edges will be just firm and the middle should be soft to touch but risen.
    7. Let cool. The middle will sink, don't worry. When cool, refrigerate before cutting with hot knife.
