Easy White Chocolate Crackles

    These white chocolate crackles are easy to make, without the use of copha. Ready in 5 minutes! This makes approx 6-7 large choc crackles

    Serves: 7 

    • 3 cups of rice bubbles
    • 50g white chocolate
    • 2½ tablespoons desiccated coconut

    Preparation:5min  ›  Extra time:10min chilling  ›  Ready in:15min 

    1. Microwave the white chocolate in a microwave safe bowl for 1 minute, stirring every 30 seconds.
    2. Put the rice bubbles into a large enough bowl.
    3. Spoon the chocolate into the bowl with the rice bubbles. Add the coconut and mix it all well till blended.
    4. Spoon into paper muffin cups.
    5. Chill in freezer for 10 minutes.

    I have just made these very yummy treats and they were easy. However i am guessing that the recipe should have 150gms choc, not 50gms as stated. Or else i'm a chocaholic but with such a small amount of choc it just didn't cover the rice bubbles. I also increased the coconut. I actaully made 5cups RB, 5Tspns coconut and 240gms choc and they are great. Made 29 cupcake size.  -  13 Nov 2011


    I agree with the previous comment regarding the amount of chocolate in the recipe (150g, not 50). However, I kept the rice bubbles and coconut the same and they turned out fantastic. Absolutely loved them and they're definitely a big hit. Fabulous recipe.  -  30 Nov 2015
