Real marzipan from my Opa's cookbook that is now 100 years old, so this is the real deal. It contains raw egg, so be aware those that need to be. Great for kids to get involved in the kitchen. You can form the marzipan into fruit or roll balls in icing sugar and add some cocoa to make 'potatoes'.


Serves: 4 

  • 100g almond meal
  • 50g caster sugar
  • 50g icing sugar
  • 2 egg yolks
  • 1 teaspoon almond essence

  1. Put the almond meal in a bowl, add the sugars and mix through with a fork.
  2. Add the yolks, and the almond essence, mixing with a mashing motion with the fork. Once fairly well combined, throw the fork down and get in with your hands.
  3. Mix well, then form into small balls by rolling between your palms with only a little pressure.

Almond meal

If you can not get almond meal, you can make it by getting by blanched almonds and ground down with a mortar and pestle. Do not use a food processor or you will end up with almond butter.
