Marshmallow Balls

    Yummy biscuity treats with a marshmallow centre. Just how mum used to make! I use malt biscuits but Vanilla Wine are ok too.

    Serves: 25 

    • 100g butter
    • ½ cup (90g) brown sugar
    • 1 teaspoon vanilla essence
    • ½ tin condensed milk
    • 2 teaspoonsn cocoa
    • 2 cups plain sweet biscuits crumbs, about 1 ½ pkts
    • 1 packet large marshmallows
    • coconut for rolling

    1. Put the butter, condensed milk, sugar, cocoa and vanilla together in a pot over a low-medium heat. Stir until butter is melted then stir in the crushed biscuits. Moisten hands and roll a tablespoon-ish of the mixture round a marshmallow, press firmly to close then roll in coconut.
    2. Refrigerate till set-about 30 minutes. Cut in half when set.
