This is a tasty side dish, best served after a couple of hours refrigeration. Great if you need to bring a salad for a BBQ. I always make it for Christmas lunch.

    Ingredients
    Serves: 8

    • 2 (425g) tins quality tuna in brine
    • 900ml thousand island dressing, or as needed
    • 750g large shell pasta
    • 1 large red onion
    • 1/2 red capsicum
    • salt to taste

    Directions
    Preparation:5min  ›  Cook:15min  ›  Ready in:20min

    1. Cook the pasta in salted water until tender then rinse under cold water.
    2. While the pasta is cooking, drain the tuna and flake into a large serving bowl with a fork. Finely chop the onion and capsicum and place in bowl with tuna. Add salt to taste and mix well then add the cooked pasta and mix through. Finally add the dressing and mix well.
    3. Refrigerate for at least one hour before serving.

Used different ingredients. I replaced onion and capsicum with corn kernels and finely chopped celery. The kids loved it. - 31 Jan 2009

Nice flavor. The thousand island dressing gives this salad quite a bit of sweetness. I found I didn't need the salt, but did add a bit of black pepper and some defrosted frozen green peas for color. This recipe, as written, makes A LOT of salad. I only made half the recipe and ended up using less than half the amount of dressing called for even after I adjusted the recipe amounts. - 30 May 2013
