Spaghetti Bolognese

A very rich pasta sauce. This sauce is best prepared in the afternoon (around 2-3pm) then left on simmer for a couple of hours until dinner time. Serve with your choice of pasta.


Serves: 4 

  • 2 white onions, finely chopped
  • 1/2 tablespoon oregano leaves
  • 1/2 tablespoon basil
  • 1/2 tablespoon rosemary
  • 1/2 tablespoon thyme
  • 4 cloves garlic, crushed
  • 750g minced meat
  • 2 carrots, grated
  • 2 (400g) cans diced tomatos
  • 1/2 cup tomato puree
  • 2 tablespoons tomato paste
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 cup red wine
  • 1/2 cup water
  • 2 teaspoons beef stock powder
  • 4 tablespoons Worcestershire sauce

  1. Add onion to frypan, cook till brown. Add the first lot of spices (including garlic), stirring constantly. Add the mince, cook till browned.
  2. Add grated carrot, stir. Add diced tomatoes, stir. Add tomato paste and puree, stir.
  3. Add ginger, mustard powder, curry powder, salt and pepper, stir. Add red wine and water, the beef stock powder and the Worcestershire sauce and stir.
  4. Simmer uncovered for 15 minutes, then turn the heat down to low and leave on a low simmer for a couple of hours.

It was quick and easy to put together, I didn't put the wine in it, instead I just added water, and everything still tasted yummy. - 19 Sep 2012
