Tasty, wholesome cos of the fruit and nuts but don't be fooled into thinking it's low fat:-) Easy to make and is great for morning tea.

Seafood Rick

Serves: 6 

  • 2 tablespoons margarine (or butter)
  • 1 cup brown sugar
  • 1/4 teaspoon salt
  • 1/3 teaspoon allspice
  • 1 cup boiling water
  • 1 cup chooped dates
  • 1 cup chopped walnuts
  • 1 beaten egg
  • 1/2 teaspoon bicarbonate of soda
  • 2 cups self-raising flour

  1. Preheat oven to 180 degrees C. Boil together margarine, sugar, salt, allspice and boiling water - for 5 minutes.
  2. When cool, add dates, walnuts, egg, bicarb soda and self-raising flour.
  3. Bake in moderate oven for 45 to 60 minutes until a skewer comes out clean.


For a difference try using white sugar and/or other dried fruits and nuts of your choice e.g. apricots, raisins, sultanas and slivered almonds, pecans, etc.
