These mini quiches are so quick and easy you could get your little one to help you. They are great for entertaining or as a snack and can be whipped up in no time! You can use muffin trays for these but the patty cake ones fit better.

Yummy! I used chives instead of onion and added diced tomato. I made them in a muffin pan and cut the pastry a little bigger. I doubled the quantities to make 24 - but I added an extra egg as well as I was running out of mix towards the end. The only problem I had was the ingredients didn't mix well so some had very little egg and some had a lot when spooning it in to the muffin pans. If I did it again I would only mix 1/2 the eggs in with the other ingredients and use the rest of the eggs to top up the cases at the end. - 12 Sep 2011
