Warm Garlic Rice Salad

This dish is a combination of cooked rice, garlic and butter plus some bacon and vegetables. Serve warm as a side dish at barbeques or picnics. Make the rice the day before and cool in the fridge overnight. It also makes a great leftover rice dinner.


Serves: 10 

  • 3 cups cooked long grain rice (refrigerated overnight)
  • 6 to 8 tablespoons oil/butter
  • 2 tablespoons minced garlic
  • 1 finely chopped onion
  • 250g chopped bacon
  • 250g frozen peas, corn and capsicum
  • salt and pepper to taste

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Melt butter or oil in large frypan or wok.
  2. Add garlic and onion, cook on low heat until onion is soft.
  3. Add bacon and peas, corn and capsicum, fry until cooked.
  4. Lastly add already cooled cooked rice, stir until rice is completely coated in butter.
  5. Season with salt and pepper to taste.
