Creamy Pork Meatballs

Delicious light baked pork meatballs in a creamy sauce. This recipe is easy to prepare, the raw rice absorbs most of the liquid and leaves just enough gravy to spoon over the meat.


Serves: 4 

  • 600g pork mince
  • 2 small brown onions finely chopped
  • 1 cup raw white rice
  • 1 small clove garlic minced
  • 2 teaspoons dried Italian herbs
  • 1 cup finely chopped or grated vegetables e.g. carrot, pumpkin, peas, celery
  • 1 egg
  • salt and ground white pepper to taste
  • 1x410gram can cream of celery condensed soup
  • 200ml cream
  • 1 cup milk
  • 1-2 cups water

  1. Combine first six ingredients into large mixing bowl, mix and then add egg. Mix to combine. Season with salt and pepper to taste.
  2. Roll mince into balls about size of small golf ball and place into a large ovenproof flat dish.
  3. Combine soup, cream, milk and water and pour over balls.
  4. Place in oven at about 180 degrees C for approximately one hour.
  5. The balls will swell and absorb the liquid leaving the ball soft with a little sauce to spoon over when serving.

This was really delicious - although perhaps I shouldn't have covered the dish while it was cooking because I have a lot of liquid left over. Will do it again, even though it is a bit time consuming - 13 May 2015
