Chicken Taco Salad

    Easy summer dinner or BBQ salad. You can use sliced steak instead of the chicken or no meat at all and keep it vegetarian.

    Serves: 8 

    • 1 BBQ chicken (store bought) shredded/chopped into chunks
    • 1 head of iceberg lettuce ripped and sliced for salad
    • 2 large tomatoes, diced
    • 2 cups grated cheddar cheese
    • 1/2 cup kalamata olives, seeded and sliced
    • 1 packet of corn chips broken into smaller pieces
    • For the Dressing
    • 1 bottle (250ml) Paul Newmans Ranch dressing
    • 1 jar of favourite salsa

    1. Add all ingredinets together in a bowl. Mix the dressing and salasa togetehr and mix through the salad.


    Chill all ingredients before serving, that way when you mix and serve everything is cold and the corn chips remain fresh and crunchy.
