    These amazing scones have only two ingredients and work so well! You can experiment with different flavours of ice cream too.

    Serves: 12 

    • 3 cups self-raising flour
    • 2 1/2 cups of vanilla ice cream, or other flavours

    1. Preheat oven to 180 degrees C. Measure out the ice cream cold and then melt it, either by letting it sit out or by microwaving.
    2. Pour the ice cream into a large bowl; fold the flour into the ice cream until the dough just begins to come together. Using your hands, gently knead the dough into a ball, adding flour as necessary to keep the dough from sticking.
    3. Turn the dough out onto a lightly floured surface and roll into a 22x33cm rectangle. Cut the dough into 12 circles, 7-8 cm in diameter and place on a baking sheet.
    4. Bake in preheated oven for 15-20 minutes.
