Yummy rosemary and garlic flavoured roast potatoes. Very intense flavour and great to serve with a roast of any kind.


Serves: 6 

  • 10 large white potatoes
  • 4 cloves garlic
  • 5 sprigs fresh rosemary
  • a heavy pinch sea salt
  • 3 Tablespoons olive oil

  1. Peel the potatoes and cut into evenly sized chunks, about 2.5 cm in size. Preheat oven to 180 degrees C.
  2. Peel and chop the garlic then put into morter and pestle along with all of the rosemary, chopped and all of the oil.
  3. Pound the ingrediants into a paste.
  4. Toss the potatoes in the garlic rosemary paste until covered, then put into the baking dish into preheated oven for 1hour, turning regularly.
