Apple, Sultana and Walnut Muffins

Yum Yum, a nice mix of apples, sultanas and spices in these light muffins. Great for kids and adults alike.


Serves: 12 

  • 2 cups self-raising flour
  • 2 tablespoons margarine or butter melted
  • 2 apples peeled and grated
  • 1/4 cup of sugar
  • 1 tablespoons mixed spice (optional)
  • 1 1/2 cups sultanas
  • 1 cup milk
  • 2 tbs of cinnamon
  • 1 egg

  1. Melt the margarine in the microwave and let it cool. Sift flour into large bowl. Add the sugar, cinnamon & mixed spices to the flour and mix together.
  2. Mix in the finely grated apple.
  3. When the margarine is totally cooled, mix in the egg and milk.
  4. Make a well in the centre of the dry ingredients and pour in the liquid ingredients.
  5. Lightly fold all the ingredients together, do not overmix.
  6. Spoon mixture into a greased muffin tin
  7. Cook in pre-heated 180 degree oven for 13-15 minutes. Muffins are cooked when they spring back in the centre when pressed.

I made these kind of. I tried to finely grate the apples but it just turned to mush so I used the normal sized grater. The Tablespoons of spice seemed too much so I switched them down to teaspoons, which gave a nice taste - if you really like the spices you could add more but I would only go as high as 1 Tablespoon of cinnamon 1.5 teaspoons of mixed spice. The recipe does not actually include walnut, I guess it fell off the entry list so I would say 70g of chopped walnut would work. Also comparing the amount of sultanas to the amount of mixture I felt the recipe ratio was to high so I halved the amount of sultanas. It made 35 mini muffins - 06 Mar 2013
