Warm Potato and Pasta Green Leaf Salad

    The best of all salad worlds, a great mix of pasta salad, potato salad and green salad too. Serve warm as an excellent side for fish or even just as a Sunday night dinner on its own.

    Serves: 6 

    • 100g (about 1/2 big bag) of prewashed mixed lettuce leaves
    • 1 punnet cherry tomatoes halved, or 2 medium tomatoes diced
    • 1/2 continental cucumber diced
    • 6 small potatoes peeled and cubed
    • 250g pasta
    • 2 Tablespoons of olive oil (divided)
    • 1/2 Tablespoon lemon juice
    • 1/2 Tablespoon lime juice

    1. Place lettuce leaf mix in a large salad bowl with diced tomatoes and cucumber. Cover with plastic wrap and put in the fridge.
    2. Put cubed potatoes in a microwave safe bowl and cover with cold water. Microwave on high for 10 minutes or until cooked (do not overcook). Strain water, then fry in a frypan with 1 tablespoon of olive oil until lightly golden.
    3. While potatoes are frying, cook pasta as per instructions on packet adding 1 tablespoon of olive oil to the water. Strain once cooked.
    4. Add cooked potato, pasta, lemon and lime juice to lettuce mix.
    5. Gently toss until mixed evenly, Serve immediently.
