Place lettuce leaf mix in a large salad bowl with diced tomatoes and cucumber. Cover with plastic wrap and put in the fridge.
Put cubed potatoes in a microwave safe bowl and cover with cold water. Microwave on high for 10 minutes or until cooked (do not overcook). Strain water, then fry in a frypan with 1 tablespoon of olive oil until lightly golden.
While potatoes are frying, cook pasta as per instructions on packet adding 1 tablespoon of olive oil to the water. Strain once cooked.
Add cooked potato, pasta, lemon and lime juice to lettuce mix.
Gently toss until mixed evenly, Serve immediently.
