Creamy Chicken Spaghetti

This is a quick weeknight dinner guaranteed to warm you up and fill you up. It is easy on the waistline but still has a rich and creamy taste.

Serves: 4 

  • 1 (500g) packet spaghetti
  • a little oil for cooking the sauce
  • 1 onion, finely chopped
  • 8 mushrooms, finely chopped
  • 1 red capsicum, finely chopped
  • 2 chicken breasts, cut into bite sized pieces
  • 1 can (400g) diced tomatoes with juice
  • 1/2 cup pureed tomatoes or passata
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon chilli powder
  • 1/2 teaspoon garlic powder
  • 1/2 cup light sour cream

  1. In a frypan, sauté the mushrooms, onion and capsicum.
  2. Add the chicken pieces, cooking for 5-7 minutes until chicken is browned.
  3. While the chicken is cooking, start cooking the spaghetti in a pot in lots of salted water.
  4. Back at the frypan, add the diced tomatoes, pureed tomatoes, cayenne pepper, chilli powder and garlic powder. Simmer for 10 minutes, stirring occasionally.
  5. Remove from heat and stir in sour cream.
  6. Serve over cooked spaghetti in bowls.
