    Me and my partner invented this recipe by accident one afternoon, when we thought there was "no food left"! Don't underestimate the spam - when cooked it is almost indistinguishable from crispy bacon. Give it a try!

    Ingredients
    Serves: 2 

    • 1 tin (200g) Spam, diced (or diced bacon or ham)
    • 120g button mushrooms, sliced
    • ½ head red leaf lettuce
    • 1 cup baby spinach leaves
    • 2 eggs
    • 1/2 cup crumbled feta cheese
    • 1 tablespoon grated Parmesan cheese
    • 1 tablespoon chopped peanuts
    • 4 tablespoons chopped dill
    • 8 anchovy fillets
    • 4 tablespoons ranch dressing
    • 1 cup croutons

    1. Heat a large frypan over medium-high heat. Fry the spam in the preheated frypan until it is golden brown and crispy. Remove from frypan and drain on paper towels. Cook the mushrooms in the same frypan until softened. Remove from frypan and set aside. Crack the eggs into the frypan and cook while stirring until they are cooked through and scrambled. Turn off the heat.
    2. Divide the red leaf lettuce and baby spinach leaves between two large salad bowls. Top the salad greens with the fried spam, mushrooms and scrambled eggs. Sprinkle both salads with crumbled feta cheese, Parmesan cheese, chopped peanuts, and dill. Arrange the anchovy fillets across the top of the salads and drizzle two tablespoons of Ranch dressing on each serving. Garnish with croutons.

    Made as written except that I got home with sardines instead of anchovies somehow. My review is not based on that error of mine though because well little fish take on the mighty big and bold fish taste and it was my least favorite part of the recipe. Leave the fish off altogether and you have one tasty flavorful salad. Honestly I feel fish has no place in this when you already have the salty SPAM. I added some tomatoes and red onion for color and used the cashews I already had on hand in place of the peanuts. Great salad but leave off the fish unless you absolutely love fish.
