This is a delicious variation on seafood salad that doesn't include celery for all of us who don't like the stuff! Can be a salad, a roll filling or a summer dinner.

Ingredients
Serves: 4
400g of seafood extender (AKA crab flavoured seafood salad)
1 large cucumber
1 green (Granny Smith) apple
Approx 2 tablespoons parsley
Approx 1-2 tablespoons dill
Approx 1/2 cup of chopped leek
For the Dressing
1 cup sour cream
3 tablespoons plain yoghurt
3 tablespoons ranch dressing
2 teaspoons dijon mustard
1 tablespoons pickles/relish

Dice the cucumber and apple and combine in a large salad bowl. Chop the parsley, dill and leek and add to the bowl.
Crumble the seafood extender and add to the bowl.
In another small bowl, combine the sour cream, plain yogurt, ranch dressing, mustard and pickle relish and mix until smooth, even consistence is acheived.
Pour the dressing over the salad and gentle turn salad with a spoon until the ingredients are evenly covered with the dressing.
