Sweet Potato and Pumpkin Sultana Loaf

Yummy, hearty, moist sultana loaf full of orange goodness. Ideally roast the sweet potato and pumpkin before you mash them for the best flavour.


Serves: 24 

  • 160g margarine or butter
  • 1 3/4 cups white sugar
  • 1/4 cup brown sugar, packed
  • 1 cup cooked and mashed pumpkin
  • 1 cup cooked, mashed sweet potato
  • 4 cups plain flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1/2 cup water
  • 3/4 cup sultanas

  1. Preheat oven to 170 degrees C, grease two loaf tins.
  2. Cream together butter and sugars, add the eggs.
  3. Mix in pumpkin and sweet potatoes.
  4. Add flour, baking soda, baking powder, cinnamon and cloves
  5. Add the water and the sultanas and mix well.
  6. Divide the mixture between the loaf tins.
  7. Bake for about 1 hour or until centre is firm to touch.
  8. Let the loaves rest for about 15 minutes in the tins and then another 15 minutes on a cooling rack before serving.
