Microwave Chicken Risotto

    This healthy microwave risotto is so easy you can make it anywhere with little effort and no fancy appliances needed. Great for leftover roast chicken.

    Serves: 4 

    • 2 tablespoons olive oil
    • 40g butter
    • 1 medium onion, finely diced
    • 2 cloves garlic
    • 1 cup Arborio rice
    • 3 cups (750ml) chicken or vegetable stock
    • 1 cup frozen peas
    • ½ cup finely grated parmesan cheese, plus extra to serve
    • 2 cups cooked chicken, shredded
    • ½ cup steamed broccoli florets

    1. Place oil and butter in a microwave-safe bowl. Microwave on high (100%) for 2 minutes.
    2. Add onion and garlic. Stir well and cook for a further 2 minutes.
    3. Add rice, mixing well to coat. Cook for 4 minutes.
    4. Stir in stock. Microwave for 9 minutes.
    5. Add frozen peas. Stir well and microwave for a further 9 minutes.
    6. Carefully remove from microwave.
    7. Stir in parmesan cheese, chicken and broccoli. Serve immediately.
